Jerk Marinated Vegetables
For a zingy rice dish, get the oven hot and add 300g chopped sweet potato or butternut squash in oil and Jamaican jerk seasoning to taste. Roast for 20 minutes.
Meanwhile, dry fry some thick banana slices and set aside.
Heat some oil in a frying pan and cook the Tilda Turtle Bean and Red Pepper rice until it is heated through – about 3 minutes - and then add the roasted vegetables. When it is all piping hot sprinkle with some freshly chopped coriander and serve with the banana slices. |
Jerk Marinated Chicken
Thinly slice 2 chicken breasts and coat with Jamaican jerk seasoning.
Heat a little oil in a medium pan. Brown the chicken in the oil, and add the Tilda Turtle Bean and Red Pepper rice to the pan.
Gently stir for about 3 minutes until it is all piping hot and finish with some freshly chopped coriander.
Griddle some thick slices of banana and serve with the chicken and rice. |
