Warm prawn, Cherry Tomato and Tilda Brown Basmati Rice Salad With Coriander Pesto
Making your own pesto in a food processor is so easy, it takes about 3-4 minutes. You need a big bunch of coriander, roots and all for this one, some really fruity peppery olive oil, but no cheese as it doesn’t blend well with seafood. If you can’t find raw prawns or want a short cut, you can use the ready cooked ones, and in that case I wouldn’t bother cooking the tomatoes, they can be halved and thrown in raw.
