Il a la forme et la taille d&rsquo;un ballon de football. Sa chair jaune est tr\u00e8s appr\u00e9ci\u00e9e en Asie, bien qu&rsquo;elle d\u00e9gage une odeur tr\u00e8s particuli\u00e8re, parfois compar\u00e9e \u00e0 celle du fromage.<\/p>\n<p>Les durians sont l&rsquo;un des fruits les plus nutritifs au monde. Ils regorgent de fer, de vitamine C, de potassium, de fibres et de nombreux autres nutriments. Tous ces bienfaits sont r\u00e9unis dans le fruit. Mais son odeur piquante est si forte que les durians sont interdits dans de nombreux h\u00f4tels et transports publics.<\/p>\n<p>Les durians sont beaux, incroyablement sains et tr\u00e8s populaires dans leur pays d&rsquo;origine, l&rsquo;Asie du Sud-Est. Le fruit est appr\u00e9ci\u00e9 et r\u00e9colt\u00e9 en Asie du Sud-Est depuis des si\u00e8cles. Chaque durian raconte, par sa saveur diff\u00e9rente, o\u00f9 et comment il a \u00e9t\u00e9 cultiv\u00e9.<\/p>\n<p>En 1856, le naturaliste britannique Alfred Russel Wallace a d\u00e9clar\u00e9 \u00e0 propos du durian : \u00ab\u00a0Une riche cr\u00e8me p\u00e2tissi\u00e8re avec beaucoup d&rsquo;ar\u00f4me d&rsquo;amande traduit le mieux la saveur g\u00e9n\u00e9rale, mais vous pourrez parfois go\u00fbter des saveurs subtiles rappelant le fromage \u00e0 la cr\u00e8me, la sauce \u00e0 l&rsquo;oignon, le vin de X\u00e9r\u00e8s et d&rsquo;autres plats incongrus\u00a0\u00bb.<\/p>\n<p>Certains l&rsquo;adorent, d&rsquo;autres le d\u00e9testent, mais nombreux sont ceux qui pensent que le durian a une saveur que l&rsquo;on apprend \u00e0 appr\u00e9cier si l&rsquo;on est ouvert \u00e0 sa complexit\u00e9. Une fois que c&rsquo;est le cas, le fruit peut devenir une friandise tr\u00e8s appr\u00e9ci\u00e9e. Comme le dit Wallace\u00a0: \u00ab\u00a0Plus on en mange, moins on a envie de s&rsquo;arr\u00eater\u00a0\u00bb.<\/p>\n<h2><strong>DANS QUELLE CUISINE LE DURIAN PEUT-IL \u00caTRE UTILIS\u00c9 ?<\/strong><\/h2>\n<p>Le durian est utilis\u00e9 dans de nombreux plats de l&rsquo;Asie du Sud-Est (Tha\u00eflande, Malaisie et Singapour). Mais vous pouvez utiliser ce fruit dans toutes sortes de plats, des cr\u00eapes aux pizzas.<\/p>\n<h2><strong>O\u00d9 PEUT-ON ACHETER UN DURIAN ?<\/strong><\/h2>\n<p>En dehors de l&rsquo;Asie du Sud-Est, vous pouvez trouver du durian frais, congel\u00e9 ou en conserve dans les supermarch\u00e9s asiatiques ou en ligne. Secouez-le doucement. Si vous entendez un bruit sourd, le fruit est m\u00fbr. Si vous les conservez sur le comptoir de votre cuisine, il est pr\u00e9f\u00e9rable de les consommer dans les jours qui suivent.<\/p>\n<p>Si vous souhaitez conserver le durian un peu plus longtemps, enveloppez le fruit entier dans du papier ou du plastique et mettez-le au r\u00e9frig\u00e9rateur. Mais attention : l&rsquo;odeur caract\u00e9ristique du durian peut avoir un impact sur d&rsquo;autres produits. Une fois la chair retir\u00e9e (voir ci-dessous), le durian se conserve environ deux jours au r\u00e9frig\u00e9rateur. Conservez-le ensuite en une seule couche dans une bo\u00eete herm\u00e9tique.<\/p>\n<h2><strong>PEUT-ON CONGELER LE DURIAN ?<\/strong><\/h2>\n<p>Les durians frais se consomment de pr\u00e9f\u00e9rence dans les deux jours qui suivent le moment o\u00f9 ils ont \u00e9t\u00e9 coup\u00e9s et o\u00f9 la chair a \u00e9t\u00e9 retir\u00e9e de la peau. Les durians congel\u00e9s peuvent \u00eatre conserv\u00e9s au cong\u00e9lateur jusqu&rsquo;\u00e0 trois mois. La meilleure fa\u00e7on de conserver les restes de durians est d&rsquo;envelopper le fruit coup\u00e9 dans du film alimentaire, et de le placer ensuite dans un sac herm\u00e9tique avant de le mettre au cong\u00e9lateur.<\/p>\n<h2><strong>QUAND NE PAS UTILISER LE DURIAN ?<\/strong><\/h2>\n<p>M\u00e9langer le durian et l&rsquo;alcool est une mauvaise id\u00e9e. Des \u00e9tudes montrent que le durian contient des substances qui emp\u00eachent l&rsquo;organisme de d\u00e9composer l&rsquo;alcool. Cela peut entra\u00eener des naus\u00e9es, des vomissements et des palpitations, comme si vous aviez une s\u00e9rieuse gueule de bois.<\/p>\n<h2><strong>COMMENT UTILISER LE DURIAN ?<\/strong><\/h2>\n<p>Les durians peuvent \u00eatre consomm\u00e9s crus ou cuits, dans des plats sucr\u00e9s ou sal\u00e9s. La consistance cr\u00e9meuse du durian m\u00fbr convient parfaitement aux g\u00e2teaux, aux smoothies et aux glaces. Le fruit est aussi tr\u00e8s appr\u00e9ci\u00e9 avec du riz gluant et du lait de coco.<\/p>\n<p>Quand les durians sont \u00e0 peine m\u00fbrs, leur chair est plus ferme et leur texture plus proche de celle d&rsquo;un l\u00e9gume. Ils sont id\u00e9aux pour les soupes, les currys ou les saut\u00e9s avec des oignons et du piment comme plat d&rsquo;accompagnement.<\/p>\n<p>On peut tout faire avec le durian : l&rsquo;\u00e9craser, le mixer, le r\u00f4tir ou le frire. Si vous faites bouillir, r\u00f4tir ou frire les graines, vous pouvez aussi les manger. Mais attention : crues, elles sont toxiques !<\/p>\n<p>Prot\u00e9gez vos mains de l&rsquo;ext\u00e9rieur piquant avec des gants ou un essuie-mains propre. Vous \u00e9viterez ainsi que l&rsquo;odeur ne reste sur vos mains.<\/p>\n<p>Si vous le souhaitez, vous pouvez couper la tige ainsi qu&rsquo;une petite tranche de la partie sup\u00e9rieure. Cela facilite l&rsquo;ouverture du durian. Observez ensuite les coutures du fruit\u00a0: un motif d&rsquo;\u00e9toile \u00e0 cinq branches marque les parties int\u00e9rieures. Sculptez ces veines \u00e0 l&rsquo;aide d&rsquo;un couteau bien aiguis\u00e9, puis s\u00e9parez le fruit avec le couteau, ensuite avec les mains, et retirez finalement avec d\u00e9licatesse les graines. Vous pouvez manger la chair telle quelle ou l&rsquo;ajouter \u00e0 un plat.<\/p>\n\n            <\/div>\n            <\/div>\n<\/section>\n\n<section class=\"content-section
