Mediterranean rice with feta

Heat a little olive oil in a pan over a gentle heat and fry a few halved black olives with 50g chopped sunblushed tomatoes. Stir in a large handful of rocket leaves and , when the rocket is wilted add 125g diced feta cheese. Spoon in the Tilda Chickpea, Yoghurt and Mint rice and stir until it is all heated through about 3 minutes. Serve hot with toasted pitta bread and natural yoghurt drizzled over.
