Kichdi and Bajja

A combination of rice and lentils blended with bay leaves, cumin, cinnamon and cloves. Ideal served with deep fried vegetables. Serves 4 210g (7 oz) Tilda Pure Basmati rice 120g (4oz) moong dhal 2 bay leaves 2 cinnamon sticks 6 cloves 1 tsp ground cumin 1 tsp fresh ginger, finely chopped 2 dried red chillies 4 tbsp sunflower oil Fry spices and ginger in oil until they splutter. Rinse the rice and dhal in water, drain and add to the spices. Add 510ml (17floz) of water, season with salt and cook until the rice and dhal have absorbed the water. Serve with deep fried cauliflower, potato and aubergine.
